This recipe screams fall! These Pressure Cooker Apple Pork Chops are incredibly delicious and so soft, juicy, and tender that this might become the only way you cook pork chops going forward.

Ingredients

  • 4 pork chops
  • 2 Tbsp olive oil
  • Salt and pepper, to taste
  • 2 ½ cups chicken stock, divided
  • 1 medium-sized shallot, chopped
  • 3 medium apples, cored, halved, and sliced
  • 1 large onion, halved and sliced
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp butter

Instructions

  1. Blot the pork chops try with a paper towel and add olive oil to the pressure cooker’s inner pot. Using the sauté setting, brown the pork chops for about 1-2 minutes per side. Season to taste with salt and pepper.
  2. Remove pork chops from pot. Add ½ cup of chicken stock and shallot. Cook for 1-2 minutes, or until liquid has mostly evaporated.
  3. Add apple slices and onions. Cook for about 2 minutes, stirring constantly.
  4. Return pork chops to pressure cooker. Add in remaining broth, lemon juice, and butter, and then seal the lid. Pressure cook for 12 minutes on high pressure.
