The temperature may be creeping up, but that doesn't mean that you can't still enjoy a good soup now and again! With our GoWISE Heating Blender, mixing up clam chowder is easier than ever. Not only can this cook your soup, but also mix them and chop your roughly cut veggies into finer pieces. And you can leave it warmly bubbling away so that it is ready when you are, without the fire risk of a stove! This budget-friendly recipe also uses canned clams rather than fresh, saving you time and money!

Ingredients

  • 4 slices bacon
  • 2 Tbsp unsalted butter
  • 2 cloves garlic
  • 1 onion, diced
  • 1/2 tsp dried thyme
  • 3 Tbsp all-purpose flour
  • 1 cup milk
  • 1 cup vegetable stock
  • 2 (6.5-ounce) cans chopped clams, juices reserved
  • 1 bay leaf
  • 2 russet potatoes, peeled and diced
  • 1 cup half and half*
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
  • 2 large rolls of French or sourdough bread (optional)

Instructions

  1. Roughly chop your garlic, onion, potatoes, and bacon. Set bacon and potatoes aside.
  2. Place your butter, garlic, and onions into your GoWISE Heated Blender. Using the soup function, cook for 2-3 minutes, until onions are translucent. Use the chop button to stir and further cut up your ingredients.
  3. Mix in thyme using the chop function. Mix in flour and cook until slightly browned, about 1 minute.
  4. Add in vegetable stock, vegetable stock, and reserved clam juices. Cook for 1-2 minutes. Add in potatoes.
  5. Cook for 12-15 minutes, or until potatoes are fork-tender.
  6. In a pan of your choice or in your pressure cooker using the saute function, cook your chopped bacon until brown and crispy, about 6-8 minutes. Prepare your bread rolls to be bread bowls. (optional)
  7. Stir in half-and-half and clams. If necessary, add more half-and-half to achieve desired consistency. Add salt and pepper to taste.
  8. Serve in bread bowls topped with bacon and parsley. Enjoy!

Tips

Interested in a keto version? Try swapping out the potatoes with cauliflower or celery root, and leave out the bread bowl. Happy cooking!
