St. Patrick's Day is over, and many of us are now stuck at home. Today we will let you in on a secret - pretty much any leftovers are amazing if you put them in an egg roll! Check out how we breathed new life into our leftover corned beef and cabbage.
Ingredients
- Corned beef leftovers
- Carrots
- Cabbage
- Potatoes
- Water
- Egg roll wrappers
- Swiss cheese
Instructions
- Place the egg roll wrappers on a work surface. Divide the filling mixture among the wrappers, using about a tablespoon or two of filling for each one. Brush the edges of the wrappers with water
- Fold one corner over the filling, then fold in the sides and roll up
- Brush the little egg rolls with vegetable oil and place in your air fryer
- Cook for 10 minutes at 400 degrees
- Serve with leftover sauce and Enjoy!
