Pair this cobbler with a scoop of ice cream to achieve a combination of crumbly and creamy goodness!
Ingredients
- 12 strawberries, quartered
- 1 cup blueberries
- 2 tsp lemon juice
- ¼ cup brown sugar
- ¾ cup water
- ¼ cup sugar
- ¼ tsp cinnamon
- 3 tbsp corn starch
Topping: - 2 cups pancake mix
- ½ cup milk
- 3 tbsp butter, melted
- 1 tsp vanilla
- 4 ½ tbsp sugar, divided
- ½ tsp cinnamon
Instructions
- In a medium mixing bowl, mix the berries, sugar, brown sugar, cinnamon, lemon juice, cornstarch and water together. Once mixed together, pour the mixture into the Pressure Cooker pot. (Note: You may need to add additional water to allow pressure to get high enough to cook mixture.)
- To create the topping, combine the pancake mix, milk, butter, vanilla, and 3 tablespoons of sugar in another bowl.
- In a separate bowl combine the 1 ½ tablespoons of sugar and ½ teaspoon of cinnamon.
- Then, assemble by placing large scoops of the topping on the surface of the berry mixture and sprinkle with the cinnamon and sugar mix.
- Lastly, secure the lid of the Pressure Cooker and close the pressure valve. Cook on high pressure for 10 minutes. Enjoy!
