If you love the idea of blueberry pie without all the work, then these blueberry pie bars are for you!
Ingredients
- 3/4 cups all purpose flour
 - 1/4 cup sugar
 - pinch salt
 - 6 Tbsp. cold butter, cut into cubes
 - 1 egg
 - 1/2 cup sugar
 - 2 Tbsp. + 2 tsp all purpose flour
 - 1/4 cup sour cream
 - pinch salt
 - 1.5 cups fresh blueberries
 
Instructions
- To make the crust, mix the flour, sugar, salt and cubed butter to mixing bowl, beat until combined and crumbly. Do not over mix.
 - Reserve 1/2 cup of mixture and set aside.
 - Spray an 8x8 glass baking dish with non stick spray. Firmly press the crust mixture into your pan, covering the bottom.
 - Bake crust at 350F for 10-12 minutes.
 - While crust is baking- whisk the egg in a large bowl. Add sugar, flour, sour cream, salt and gently fold in the blueberries.
 - When crust is ready, remove from oven and spoon filling over the top of the crust.
 - Sprinkle the top with remaining crust mixture you had set aside, distributing evenly.
 - Bake at 350F for 45 minutes.
 - Cool for at least 10 minutes before serving. Enjoy!
