No need to run to Chipotle. Make this incredibly easy and flavorful side dish at home.


  • 2 Cups basmati rice
  • 2 1/2 Cups water
  • 3 Tablespoons vegetable oil
  • 2 Teaspoon salt
  • 2 Limes
  • 1/2 Cup fresh chopped cilantro


  1. Add the rice, water, oil, salt, and juice of one of the limes to the pressure cooker pot and stir.
  2. Lock lid in place, and with the {Pressure +/-} button manually set time for 6 minutes.
  3. The pressure cooker will start to heat up and cooking cycle will start as soon as it has reached pressure temperature.
  4. After the cooking cycle is over, let the pressure drop before you release the steam.
  5. Take out the rice and fluff rice with a fork.
  6. In a medium bowl, combine chopped cilantro, lime juice of the other lime, and mix thoroughly.
  7. Enjoy!
