A healthy and fresh-from-the-garden appetizer


  • 1 medium size eggplant
  • 1 large egg
  • 1 tbsp water
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp Italian seasoning
  • ¾ cup grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • marinara sauce


  1. Slice eggplant into about ¼” rounds. Lay eggplant on a prep surface and sprinkle with salt. Let sit for 10 minutes. After 10 minutes, pat eggplant dry with a towel.
  2. In a medium sized bowl, beat egg with water. In another bowl, combine flour, salt, pepper, seasoning and Parmesan cheese. In another bowl, add breadcrumbs. Dip eggplant slices in egg wash, then into flour mixture to coat, then into breadcrumbs to coat.
  3. Place in an even layer inside the mesh basket. Air fry for 7-10 minutes at 360°F or until golden brown.
  4. Serve with warm marinara sauce for dipping.
