When you're craving both onion rings and guacamole, this recipe delivers them both at once!

Ingredients

  • 1 yellow or white onion
  • 4 avocados
  • 1 tomato
  • 1/4 cup cilantro
  • Juice of 1 lime
  • 1 tsp salt
  • 1 tsp chili powder
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup panko crumbs

Instructions

  1. Slice onions into rings.
  2. Remove the skin and pit of avocados. Mash with a fork.
  3. Dice the tomato and chop the cilanto. Add to the avocados with the spices, then mix thoroughly.
  4. Place the onion rings on a foil-lined baking sheet. Fill the centers of the rings with guacamole mixture.
  5. Tip: to ensure that the guacamole does not fall out during breading step, freeze for 1 hour.
  6. Dip each ring sequentially into eggs, flour, and panko.
  7. Place in air fryer basket/onto air fryer oven rack. Brush lightly with olive oil.
  8. Air fry for 6 minutes at 400°. Flip and brush opposite side with olive oil, then air fry for 6 additional minutes.
  9. Enjoy!
