Roasted to perfection - these veggies are an excellent side to any meal

Ingredients

  • 1 sweet potato
  • 1 lb. mini red potatoes
  • 1 lb. brussels sprouts
  • 12 oz. carrots
  • 1 yellow onion
  • 1 yellow squash
  • 1 rutabaga

    Seasoning:
  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp pepper

Instructions

  1. Slice your desired veggies and place them in a mixing bowl. Toss with olive oil, salt and pepper to taste.
  2. Place your tossed veggies in the air fryer basket with perforated parchment paper (optional). Air fry at 400°F for 20 minutes. Enjoy!
