Roasted to perfection - these veggies are an excellent side to any meal
Ingredients
- 1 sweet potato
- 1 lb. mini red potatoes
- 1 lb. brussels sprouts
- 12 oz. carrots
- 1 yellow onion
- 1 yellow squash
- 1 rutabaga
Seasoning: - 2 tbsp olive oil
- 2 tsp salt
- 2 tsp pepper
Instructions
- Slice your desired veggies and place them in a mixing bowl. Toss with olive oil, salt and pepper to taste.
- Place your tossed veggies in the air fryer basket with perforated parchment paper (optional). Air fry at 400°F for 20 minutes. Enjoy!
