A healthy alternative to clams and fettuccine. It's high in vitamins with anti-inflammatory benefits!
Ingredients
- 3 sweet potatoes
- 2 Tbsp olive oil, divided
- 4 lbs of clams
- 2 Tbsp minced garlic
- 1 cup of coconut milk
- 1 Tbsp vegetable concentrate
- 2 Tbsp minced ginger root
- 1 Tbsp ground turmeric
- Juice of 1 lime
Instructions
- Peel sweet potatoes, then spiralize them using a food processor or other tool
- Use the saute function on your pressure cooker. Add 1 Tbsp of olive oil and place the noodles in the pot. Saute until tender. Transfer noodles to a separate bowl. Do not turn off the saute setting.
- Pour in remaining olive oil to the pot. Add 4 lbs of clams, 2 Tbsp of minced garlic, 1 cup of coconut milk, 1 Tbsp vegetable concentrate, 2 Tbsp minced ginger root, 1 Tbsp ground turmeric, and the juice of 1 lime. Stir to combine.
- Once the ingredients have come to a simmer, close the lid. Cancel the saute setting and cook on high pressure for 2 minutes.
- Plate noodles, clams, toppings, and sauce.
