This delicious recipe was created by one of our bloggers - Maggie Huynh! She utilized our 5.3 Quart Air Fryer with Accessories and the silicone muffin tray included to whip up this dessert. It's the perfect treat just in time for the holidays and even if you're following a macro, gluten free or dairy free diet, you can substitute the ingredients so that you can enjoy it too!

Ingredients

  • 1 cup sweet baking mix (Explorado Market) or 1 cup almond flour
  • 1 tbsp pumpkin spice seasoning
  • ½ tbsp cinnamon
  • 1 tbsp Lakanto Golden sweetener (if using almond flour add ¼ cup sweetener of choice in addition)
  • ½ tsp baking powder
  • 2 eggs
  • 4 tbsp unsalted butter, melted (substitute melted coconut oil for dairy free)
  • 1 tsp pumpkin extract
  • ½ tsp vanilla extract
  • 2 tbsp chocolate chips (omit for dairy free)
  • walnuts for topping, optional

Instructions

  1. Mix all of your dry ingredients (minus the chocolate chips together), so there are no lumps.
  2. Add in your melted butter and both extracts. Combine well before adding your eggs. Then, add in your chocolate chips and spoon your batter into the silicone molds.
  3. Place them in the air fryer basket and air fry at 310°F for 15-17 minutes.
